Mango-Champagne Granita Recipe

Serves: 4–6
Prep time: 10 minutes
Total time: 3 hours 10 minutes (including freezing time)

Ingredients:
• 2 ripe mangoes (about 2 cups of pulp)
• 1/2 cup water
• 2–3 Tbsp. honey, agave syrup, or coconut sugar (adjust to taste)
• 3/4 cup chilled champagne
• Mint leaves or edible flowers for garnish (optional)

Instructions:

  1. Peel the mangoes, remove the pit, and blend the pulp with the water and chosen sweetener until smooth.

  2. Add the champagne and stir gently with a spatula (do not whisk to preserve the bubbles).

  3. Pour into a wide, shallow dish. Freeze for 3 hours, scraping with a fork every 30 minutes to form crystals.

  4. Serve in chilled glasses, garnished with fresh mint or edible flowers if desired.

Storage and shelf life

• Can be kept frozen for up to 3 days. For best texture, scrape again before serving.
