Green Salad with Cilantro Yogurt Dressing Recipe
Servings: 4
Ingredients
For the salad:
4 cups mixed leafy greens (baby spinach, arugula, romaine, or your favorite blend)
1/2 cucumber, thinly sliced
1/4 red onion, thinly sliced
1/2 avocado, sliced (optional)
1/4 cup cherry tomatoes, halved
For the dressing:
1/2 cup plain Greek yogurt (can use lactose-free version)
1 small garlic clove, minced
2 tablespoons fresh cilantro, finely chopped
Juice of 1/2 lemon (optional)
1 tablespoon olive oil
Salt and pepper to taste
1 teaspoon honey or agave syrup (optional, for balance)
Instructions
In a small bowl, mix all dressing ingredients until smooth. Taste and adjust seasoning. Let sit in the fridge while prepping the salad.
In a large bowl, combine the greens, cucumber, onion, avocado (if using), and cherry tomatoes.
