  • ½ cup milk (dairy or plant-based)

  • 1 tsp. ground cinnamon

  • 1 tsp. vanilla extract

  • 1 Tbsp. coconut oil or butter for cooking

  • 1 cup plain unsweetened yogurt

  • 1 cup fresh fruit (such as strawberries, blueberries, raspberries, kiwi, etc.)

  • 1–3 Tbsp honey (or agave syrup)

Instructions

  1. In a bowl, whisk together the eggs, milk, cinnamon, and vanilla.

  2. Heat a large skillet over medium heat and add a bit of coconut oil or butter.

  3. Dip each slice of bread into the mixture for a few seconds on each side.

  4. Cook the toast for 2–3 minutes per side until golden brown.

  5. Serve with a spoonful of yogurt, fresh fruit on top, and a drizzle of honey.
